为了招待友人一家,HK参考网上食谱做了12个三文鱼菠菜马芬。奶香浓郁鲜美溢人的内馅,朋友们都称赞这个咸味的马芬很好吃。有时候做这种咸味的马芬来当小点心都很不错,自己可以随意加入自己喜欢的海鲜蔬菜等, 健康又好吃。。。 :D
Smoked Salmon and Spinach Savory Muffins
Ingredients:
1. 2 cups flour
2. ½ cup freshly grated Parmesan cheese, plus more for topping
3. 1 Tbsp baking powder
4. ½ tsp kosher salt
5. ¼ tsp freshly ground pepper
6. 1 cup milk
7. 2 large eggs
8. ¾ cup cottage cheese
9. ¼ cup (½ stick) unsalted butter, melted and cooled
10. ¾ cup diced ham (replaced with smoked salmon)
11. 3 scallions, thinly sliced
12. ⅓ cup frozen chopped spinach, thawed and squeezed dry
Directions:
1. Preheat the oven to 400˚F. Combine flour, Parmesan, baking powder, salt, and pepper in a medium bowl. Whisk milk, eggs, cottage cheese, and butter in another bowl. Stir wet ingredients into dry ingredients until just combined, then fold in smoked salmon, scallions, and spinach.
2. Mist a standard 12-cup muffin tin with cooking spray, then divide batter among cups. Sprinkle some more Parmesan on top of each muffin. Bake until puffed and browned in spots, about 25 minutes. Let stand about 5 minutes before serving.
