Actually I used the normal char siew recipe for marinate : 1/2 teaspoon 5 spice powder2 tablespoons honey2 tablespoons Shaoxing cooking wine 1 tablespoon hoisin sauce1 tablespoon Chinese dark soy sauce2 teaspoons oyster sauce2 cloves garlic, grated1 teaspoon red colouringbut the most important is the pork. normally i used pork belly, but this few times i changed to use the meat from the shoulder part (有一层很肥的肥油在肉上),here called brateschulter.
